I like sliders. They seem to take the ordinary sandwich and turn it into fun food in my mind. Recently my daughters made Buffalo Chicken Sliders for dinner. This sandwich has a great flavor and a nice crunch with the fresh ingredients used as a topping. And let me just emphasize here that they are made in the crock pot. An added bonus in my mind. A day for honoring mothers. I think it was a grand idea to set aside a day such as this. It's nice to be able to pause and think of just how much we have been blessed by our mothers. <br />

I have a wonderful mother that I have been blessed with. She worked hard while I was growing up, seeing to it that we were all taken care of, often seeming like the anchor that kept everything together during tough times. Strong family values were important to her, and she instilled in each one of her children the importance of enjoying each other, something which all seven of us continue to do to this day.<br />
<br />
Take a moment today, and thank the Lord for your mother. And to all of you that are mothers, I hope you have had a chance today to pause and thank the Lord for choosing you to be a mother.<br />

My Thanksgiving preparations are now complete. I've been working on everything the past few days so that tomorrow can pass by smoothly and with no stress. My biggest help with all the preparations is my trusty notebook. Years ago I realized that it just didn't make much sense to reinvent my grocery list, menu, and gather up the necessary recipes each and every year. So I saved everything on the computer, printed out a hard copy and placed it all in a holiday notebook. I even included a list of goals for each day for the week prior so that I wasn't overwhelmed on one single day. I got that idea from my mom years ago when I was preparing my first Thanksgiving dinner, and didn't have a clue how to make it all work out. She sent me a letter (of which I still have) detailing how she broke it all down so it didn't seem like such an impossible task. Preparing this feast isn't impossible anymore; and all of the hard work always seems worthwhile when we sit down around the table together as a family and give thanks, enjoying a feast that the Lord has so graciously provided.</div>

The deceased wasn't a direct relative of mine; however, it was my brother-in-law's father. It made me sad to see my sister and brother-in-law grieving, as well as the rest of my brother-in-law's family. The loss of a loved one is so difficult. But during the funeral I got to thinking about life; because on my way over to the funeral, I had a message from a friend that her daughter-in-law had gone to the hospital to deliver their first baby. So not only was I praying for comfort for the family of the deceased; but also for the family of this new little life coming into the world. An end of a life being honored, and a new little life beginning .... all at the same time.<br />
<br />
It made me think that in our busy day-to-day hustle, lives are beginning and ending all around us. People are grieving and rejoicing everywhere continually. In Ecclesiastes 3:2 it says there is "a time to be born, and a time to die". They are listed together because they go together. God's plan keeps rolling along without a hitch .... babies are born while others are passing away. God commands us to love one another. That's why it hurts so much when we lose a loved one. But God knew that would be the case and promised to comfort the grieving. He understands our emotions.<br />
<br />
The name of the man whose funeral I attended was Ed. I thought about how Ed had undoubtedly rejoiced at the birth of all of his children, and as I glanced around the room, there they all were honoring his life. Without him they would not have lived, and now that he has died he has left a legacy to continue on as it had been before he was even born. His parents had rejoiced over his birth when he was born, the pattern of life just keeps going on.<br />
<br />
So tonight I first raise a glass to Ed. For being a loving husband, someone who loved his wife for 63 years without ever having an argument, yes that's really true. He lived with his sweetheart until the end. And for being a devoted father instilling in all of his children strong values and the importance of family. And secondly, I raise a glass to a brand new baby boy who is beginning a legacy of his own.<br />

This summer when my sister, Molly, was hosting a rehearsal dinner for her son's wedding, she needed an idea for the meal for younger kids as she knew that there was a good chance they would not be interested in the Indian food that she had planned. She came up with packing individual snacks for them that would keep their interest and fill them up.<br />

Snacks of choice included an individual fruit cup of mandarin oranges along with a spoon, Gogurt, cheese and breadsticks, string cheese, Cracker Jacks, and a box drink. <br />

It's been a little over two weeks since my son's wedding. Hard to believe all of the anticipation and planning is now well behind us. The wedding was beautiful. We were blessed with perfect weather for the outdoor ceremony, and also blessed with so many friends and family taking the time to come and celebrate with us. Beautiful seems almost lacking in describing the bride, my new daughter. She was absolutely stunning! My son was so handsome and so happy. I loved seeing him beam when his bride walked down the aisle. <br />
<br />
The colors were red, black, and white. We had told Emma, the bride, that we would help her with the centerpieces. I wanted to be able to use mason jars since I have a huge supply, and that would cut down on the cost of buying vases. So after discussing ideas with Luke and Emma, mason jars it was. They were filled with baby's breath, which was so pretty and simple. Red ribbons were tied around the neck of the jar and a small black square with a hand printed "G" written with a chalk pencil on black paper was tied to the red ribbon. Two little rhinestones were also placed beside the G. Fresh red rose petals were sprinkled on each table on top of red and black paper, and finished off with silver glitter. <br />

My son is getting married. He is the first of my children to take this step, and thus it is a very new experience for me as his mother. When my children were young, it was not uncommon for mothers of grown children to tell me to enjoy the time with my kids because it will go by so quickly. Well, I'm there now, and that is so true. They really do grow up in the wink of an eye.<br />
<br />
I'm happy for my son, and pray that God will bless his new life abundantly. I'm thankful to be getting a new daughter, and look forward to having her as a part of our family now. I feel like I am turning a corner in my life and heading down a new avenue as a mother, but it is a good avenue, and I look forward to seeing what lies ahead.<br />

Recently, I was planning a visit to my mom and wanted to bring some dessert along to give to her. I know how she loves lemony desserts, and my eye landed on a lemon bar recipe in the current issue of Food Network magazine. It is a <a href="http://www.foodnetwork.com/recipes/paula-deen/lemon-bars-recipe2/index.html" target="_blank">Paula Deen recipe</a>, and knowing her reputation for rich and delicious desserts, decided to give it a try. Well, I must say, these were the most fabulous lemon bars that I have ever tasted in my entire life. I think from now on I will just dismiss any future recipes I might happen upon, because I don't think these could ever be topped.<br />

I have been gone from the house all day, and came home kind of tired and in a put-your-feet-up kind of mood. However, that mood quickly changed when I found a parcel on my doorstep from Amazon. I had placed an order earlier this week, but wasn't even expecting it so soon. Upon opening the package, my tiredness immediately disappeared and was replaced with a happy dance because inside was a book I've been looking forward to receiving. It is called "Everything Goes with Ice Cream" by my blogging friend, <a href="http://bluebirdnotes.blogspot.com/" target="_blank">Koralee Teichroeb</a>. Koralee is the resident blogger over at<a href="http://bluebirdnotes.blogspot.com/" target="_blank"> Bluebird Notes</a>, which happens to be one of my very favorite blogs. Since I've only just received the book this evening, I haven't had a chance to try any of the recipes; however, upon initial perusal, I know it is going to be such a fun book. Not only is it filled with delicious looking recipes, she has also included craft projects, and little introductions to her daughters and a few of her friends that contributed recipes to the book. It is filled with beautiful photography, which I'm going to guess is all by Koralee herself, being the amazing photographer that she is. I can already tell that it will be a late night for me because I want to start reading through this delightful book and start planning on what I want to make first. Something I think I typically take for granted. It all causes my heart to rejoice because it's like a ray of hope that spring is truly on its way. And to top it all off there has actually been sunlight streaming in the window this morning (a rare commodity around here in the winter) and birds are chirping merrily outside. There is still snow on the ground, but that really doesn't matter, because the birds know what's around the corner.<br />

God is my teacher, and by following His instruction, I can finish up this year with a beautiful picture. Undoubtedly this year will be filled with many blessings, many trials, and unforeseen events. But I can especially relate to those of you who are still preparing for the upcoming holiday. I haven't even begun my baking yet, that's on the agenda for today; and I've been busily working on finishing the hand made gifts that I always seem to wait until a couple of weeks before Christmas to begin. So just in case there is anyone out there still trying to drum up ideas for gifts, here are a couple that just might work for you.<br />

Large acrylic drinking glasses with straws are a very fun gift to give. And when you fill one with some of the individual cold drink mixes that are available in every grocery store, it adds just that little extra touch to makes it even that much nicer. Costco sells a package of the drink mixes for such a reasonable price, that if you were going to make more than one of these gifts up, that is a great way to go.<br />

Waiting for it to come out of the oven that is. The reason being is that it is my last item to prepare before tomorrow's feast.<br />

A greater part of my day today has been spent in the kitchen with recipes here and there, along with various lists of what was needed to be accomplished, and the continuous loading and unloading of the dishwasher as items were crossed off my lists and placed in the refrigerator. I just love cooking for this holiday. Just think, a special holiday set aside for thanking our Creator for all of our many blessings. And one of the blessings I am very thankful for is the mere fact that I can spend time cooking up a big feast for my family. And tomorrow when we all sit down together at the table and I see everyone enjoying the meal, I will be giving thanks for my family that the Lord has given me, they are one of the biggest blessings that I have ever received.<br />

I think that because of more modern ways of milling the flour, it really isn't necessary. However, I always prefer sifting. 2 cups flour<br />
1 Tbsp. baking powder<br />
1/2 tsp salt<br />
1/2 cup butter<br />
1 cup sugar<br />
2 eggs<br />
1 1/3 cups mashed, ripe bananas<br />
1 cup chopped pecans or walnuts<br />

Sift together flour, baking powder, and salt. Set aside. Cream together shortening and sugar. Beat in eggs, one at a time. Stir in mashed bananas. Add dry ingredients all at once, stirring just enough to moisten. Gently stir in nuts. Spoon into greased (or lined) muffin tins, filling 2/3 full. Bake in 350 deg. oven for 18-20 minutes or until golden. This morning is the morning. Time to start back to school. I'm not ready for summer to come to a close because it went entirely too fast. But part of me is looking forward to settling back down into a routine and adding a bit of order to our lifestyle. And of course with a new school year comes new school supplies. It always makes me happy to see how some new pens, pencils, notebooks, and paper can bring a joyful start to the new year -- especially new crayons. Even though my daughter is well beyond her crayon years, I still buy her a box as a special surprise on the first day of school. It might seem silly to some, but for us that has become a happy tradition in our little home school. <br />

We have had beautiful weather this summer (well at least since the weather straightened out and stopped raining), and my garden has been producing very nicely. <br />

Speaking of cucumbers, a couple of days ago, I got up early and picked while it was still cool outside. I picked an entire basket full. They actually weighed in at around 7 pounds worth. (And yes, I weigh my cucumbers when I pick them, because I have an antique scale in my garage, and I figure I might as well put it to good use):<br />

So far I have made 15 quarts of dill pickles, and hope to make at least that many more. My recipe is the same recipe my grandma used for years and years, and has become a family favorite.<br />
<br />
My garden hasn't received the special care that I had hoped to give it this summer, but it is such a blessing to still receive a bountiful harvest despite the fact that I planted it so late in the season, there are still many weeds that need pulling, and plants that haven't gotten properly thinned. <br />

And that works just fine unless it is the only recipe in the cookbook that I use. Which was the case for my recipe for Mini Meat Loaves. This particular cookbook belonged to my daughters, and it was always on their bookshelf whenever I needed it. Until one day I went for it and it wasn't there. When I asked them where it was, they said they had assumed I had copied down my recipe, and since we didn't use the book for any other recipes, they thought they had donated it to a thrift shop. Well, I hadn't copied it down, and really wished that I had as it was one of those go to recipes that I like to use. But fortunately the little book was found in a stack of books on their way to the thrift shop, and I was so happy. I immediately copied the recipe down and realized that I need to do this with other recipes that I like from books I don't use for anything else. So my lesson was learned, and in case you are interested, the recipe follows. If you like meat loaf, these have a very good flavor, and because they are small, they cook very quickly.<br />

<u>Mini Meat Loaves</u><br />
<br />
1/4 cup ketchup<br />
2 T light brown sugar<br />
1 T Dijon mustard<br />
1 1/2 pounds ground beef<br />
1 cup bread crumbs<br />
1 cup tomato sauce<br />
1 large egg, lightly beaten<br />
4 tsp dried basil<br />
1 tsp garlic powder<br />
1 tsp onion powder<br />
salt and pepper<br />
<br />
Line a broiler pan with foil and place in oven. Preheat oven to 425 deg. Whisk together ketchup, brown sugar, and mustard in a small bowl and set aside. In a large bowl, combine remaining ingredients, but do not overmix. Divide mixture into 4 equal portions (I actually divide it into even more portions) and shape each into a mini loaf.<br />
<br />
Bruch each loaf with ketchup mixture. Remove pan from oven and mist with Pam. Transfer meat loaves to hot broiler pan, and bake about 20-25 minutes or until center registers 160 deg. F. Let stand on broiler pan for 2 to 3 minutes before transferring to plates.<br />
